(unfollowed you by accident oops) so is the grammar in czech like a "i eat a banana" or an "i banana eat" situation

if you say I'm eating a banana it's jím banán. which literally is eating banana. in czech you don't need to say I because the form of the verb gives it away.

you're eating a banana = jíš banán

see how the verb changed? it's still the same verb but just in the "you" form
