For people who are sensitive to gluten, these gluten-free Rocky Road Bars are a delicious treat. Encased in a thick and luscious condensed milk mixture, crispy rice cereal, chocolate chips, mini marshmallows, and almonds are all firmly packed within. Ideal for a guilt-free gluten-free treat!
Ingredients: 2 cups gluten-free crispy rice cereal. 2 cups gluten-free mini marshmallows. 1 cup gluten-free chocolate chips. 1/2 cup chopped gluten-free nuts e.g., almonds or pecans. 1/2 cup unsalted butter. 1 cup gluten-free sweetened condensed milk. 1 teaspoon vanilla extract. A pinch of salt.
Instructions: Press parchment paper into a 9 x 9-inch 23 x 23 cm baking pan, leaving a small overhang for simple removal at a later time. The crispy rice cereal, chopped nuts, mini marshmallows, and gluten-free chocolate chips should all be combined in a big mixing bowl. Stir thoroughly and reserve. Melt the unsalted butter in a medium saucepan over low heat. Add a dash of salt and the sweetened condensed milk that is gluten-free. Cook for three to five minutes, stirring continuously, or until the mixture is smooth and beginning to thicken slightly. After taking the saucepan off of the burner, whisk in the vanilla extract. Over the dry ingredients in the mixing bowl, pour the butter and condensed milk mixture. Mix everything until thoroughly mixed. Using a spatula or the back of a spoon, transfer the mixture to the prepared baking pan and press it down evenly. The bars should be chilled for at least two hours, or until they are solid and set. When the bars are solid, remove them from the pan by using the overhanging parchment paper. After putting them on a cutting board, cut them into bars or squares. Your gluten-free Rocky Road Bars are ready to be served!
