Considering that Sebastian was seemingly only given a first name at the beginning of his contract, I would assume that demons choose their own surnames should they become necessary?
Given the etymology of his name, I would guess that Sebastian came up with it when officially fully introducing himself to Tanaka, knowing that the man was Japanese and might pick up on his little bit of word association (since we know that Sebastian is a fan of wordplay).
He also probably had some prior knowledge of the demonology reports of the late Sébastien Michaëlis (1543-1618), which just meant double points for humour and irony - not just to be recognised by himself, but also by the demon Berith who had given over the information, as one of his noted roles in Hell is to officiate demonic pacts as Chief Secretary of Hell and Head of Hell's Public Archives.

But on a serious note, this was what I was meaning about Dean being portrayed as something different than what the show wants us to accept him as. Because I do think these lines and the way Matthew does them is supposed to be off-putting. (In fact -- and I know people are gonna be shocked by this because I talk a lot of shit about him, but -- I think Matthew did a terrific job in season 1. The way the character skirted the line between absolute privileged jerk and a guy just trying to do his best was fantastic. It just outstayed its welcome.)
75% of the time he’s doing or saying these really off-putting things, whether it’s racially insensitive, sexist or downright privileged. And then 25% of the time he’s actively put forth as this standup guy who deserves your sympathy (the most sympathetic character, apparently!!).
And it makes you question that 75%; what on earth the writers are doing?? Are they saying the 75 is okay? Are they saying this is realistic; what real men are like (by which they’re also basically saying it’s okay)? Or are they simply confused and contradicting themselves?
If I were watching the show, I’d say I’m curious to see how the MRA stuff is brought forth and how the writers handle it because I think it’ll be very telling. That being said, I doubt it’ll touch on his whiteness because this show’s “feminism” is honestly several decades behind.
