The second champenois I went sky-high with today, this time over two episodes of highly drinkable, light but still interesting @heavensake sake made in conjunction with Regis Camus, master blender of @piper_heidsieck champagne - the first a blend of the rices from north-east Japan, light, elegant and citrusy lifted, the second a more mellow, deeper version from one polished variety of rice from the south-east. This melted on tongues like the cuisine served alongside. Great to see old acquaintances and new over top notch culinary imaginings on a drink that allegedly will leave you hangover free thanks to its no sulfites.
