If you know anything about me, the one thing to remember is I don’t mess around when it comes to food. When I say it is good, it is damn good. I am not a critic, I cook, taste and explore. When I find something good I devour it! On today’s episode of the Coronavirus Cooking Diaries lets talk about cheese. Really muffuffin insanely good cheese! Allow me to introduce you to the Cellars at Jasper Hill Farms. Jasper Hill is a working dairy farm with an on-site creamery in the Northeast Vermont. An underground aging facility helps to age cheese made by the creamery, as well as those made by other local producers to perfection. Jasper hill feeds the leftover whey from the cheesemaking process to heritage breed pigs that roam the grounds. They strives to make the highest quality cheese while supporting Vermont's working landscape. They are driven, innovative and believers in quality and Terroir of cheese or their regional taste of place. Now let’s get to the cheese. (Excerpts taken from the Jasper Hill Cellars website) Pictured here is Harbison, a soft-ripened cheese with a rustic, bloomy rind. The cheese is wrapped in strips of spruce cambium, the tree's inner bark layer, harvested from the woodlands of Jasper Hill. Harbison is woodsy and sweet, balanced with lemon, mustard and vegetal flavors. Landaff has a natural rind and a semi-firm cheese with subtle aromas of cave and grass. Its balanced complexity has a bright buttermilk tang and savory brown butter notes. Ginnimere is a take on Jura Mountain classics like Vacherin Mont d’Or or Försterkäse. This decadent cheese is made only during winter months when Jasper Hill’s Ayrshire cows are giving rich, hay-fed raw milk. It’s washed with Barr Hill Gin from Caledonia Spirits.
