Bread Crusts Effectively Protect Against Cancer
Scientists said that eating bread crumbs is an effective prevention of colorectal cancer. Details of the study - in the journal European Journal of Cancer Prevention.
According to the information given in the publication of this scientific journal, chemical reactions occur during the baking of bread, due to which the substance is formed, the proline-lysine. In essence, it is a healthy antioxidant, that is, a compound with an anticarcinogenic effect.
"Regular consumption of food containing this antioxidant delays the development of precancerous lesions of the large intestine," the researchers stated in an article in the journal.
According to scientists, the greatest amount of proline-lysine is contained in a crust of bread: in it, its concentration is eight times higher than in the rest of the loaf.
It is noteworthy that the fact of producing this antioxidant when baking bread was confirmed by the data of studies conducted in different years by scientists from the University of Annamalai in India and specialists of the University of Monaco.
Scientists from the University of Monaco conducted an experiment in rats. This experiment showed that the bread antioxidant proline-lysine is able to block the development of a large intestine tumor by 70%. Scientists believe that to protect against intestinal cancer, this healthy antioxidant is necessary for a person every day.
