These Apple Butter Snickerdoodle Bars are soft and cinnamony delicious. A delectable bar that combines the flavors of apple butter and classic snickerdoodle cookies.
Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1/2 cup brown sugar, packed. 2 large eggs. 1 teaspoon vanilla extract. 3 cups all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon salt. 1 cup apple butter. 1/4 cup milk. 2 teaspoons ground cinnamon. 1/2 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. 1/4 cup granulated sugar for coating.
Instructions: Preheat the oven to 350F 175C and grease a 9x13-inch baking pan. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs, one at a time, and then stir in the vanilla extract. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Press about two-thirds of the cookie dough into the prepared baking pan to form an even layer. In a small bowl, mix together the apple butter and milk until well combined. Spread this mixture over the cookie dough layer. In another small bowl, combine the ground cinnamon, nutmeg, and cloves. Take spoonfuls of the remaining cookie dough and drop them evenly over the apple butter layer. Sprinkle the cinnamon-spice mixture over the top of the cookie dough. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and let the bars cool completely in the pan on a wire rack. Once cooled, cut into bars and optionally dust with powdered sugar before serving.
