Ingredients: 1 cup arborio rice. 4 cups vegetable broth. 1 onion, finely chopped. 3 cloves garlic, minced. 1 can 15 oz white beans, drained and rinsed. 4 cups mixed greens spinach, kale, chard, chopped. 1/4 cup grated Parmesan cheese. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Warm up the olive oil in a big pot over medium-low heat. Put in the garlic and onion, and cook for about 5 minutes, until the onions are soft. Add the arborio rice and stir it around to coat it with oil. Cook for one to two minutes. Add one cup of vegetable broth and keep stirring until it is all absorbed. Add more broth, one cup at a time, and stir the rice often for about 20 minutes, or until it is creamy and soft. In the meantime, heat the olive oil over medium heat in a different pan. For about one minute, until the garlic smells good, add the minced garlic. Put in the mixed greens and cook for about 3 to 4 minutes, until they wilt. Add the white beans and cook until everything is warm. Grate some Parmesan cheese over the cooked risotto and add salt and pepper to taste. Add garlicky greens and white beans to the top of the risotto before serving. Have fun!
