I got inspired this afternoon by @healthcoachmiro (Miro Kloosterman) and made myself a delicious lunch APPLE PORRIDGE! The recipe comes from @medicalmedium and I’ve blended it all due to my dental surgery (all good now, strong recovery). “ APPLE PORRIDGE | There’s something so delightful about starting the day with a simple bowl of hearty goodness that’s specifically geared to help you heal. This flavor-packed Apple Porridge skips the grains for a delicious bowl of fruit-based satisfaction. __ Apples are anti-inflammatory for the thyroid because they starve the pathogen that causes thyroid problems. When their pectin enters the digestive system, it releases phytochemicals that bind onto the pathogen, shrouding the virus cells so that they can’t feed and proliferate. For more on the undiscovered healing properties of apples and how they are critical for the liver, check out my book, Liver Rescue. __ Apple Porridge with Cinnamon & Raisins __ Ingredients: 3 apples, sliced ¼ teaspoon cinnamon 1 pinch vanilla bean powder 2 dates, pitted 1 teaspoon honey (optional) ½ lemon ½ cup raisins ¼ cup walnuts (optional) ¼ cup shredded coconut optional __ Directions: Combine the apples, cinnamon, vanilla bean powder, dates, honey, and the juice of the lemon in a food processor. Process all of the ingredients together until they are just combined. Pour the apple mixture into a bowl and stir in the raisins, walnuts, and shredded coconut if desired. Serve and enjoy. __ Tip: * Feel free to get creative and figure out what toppings you like the most! This recipe is fun to make and fun to eat. Get your kids involved and pick your own favorite toppings. As you crunch away on these delicious caramel apples, know you are feeding your body a wealth of healing nutrients. __ Apples open up a part of you and change the energy within and around you to attract happier and brighter things. They can bring back your vibrancy, elevate you, lighten your spirit, and make you more energetic. This is because for thousands of years, we’ve stored apples to get us through the winter months. The fruit is a ray of hope that puts us in touch with the good life. It’s instilled in our bodies that when the outside world seems bleak, an apple can reconnect us to life, rebirth, sunlight, and summertime. __ Raw Caramel Apples __ Ingredients: 1 cup fresh dates, pitted Vanilla bean seeds from 1 pod (or sub 1/2 tsp alcohol-free vanilla extract) 2-3 tbsp unsweetened almond or coconut milk 2 tbsp coconut oil 1 tsp lemon juice (optional) 6 whole red apples, such as gala or fuji 6 popsicle sticks __ Toppings: 1/2 cup chopped nuts - almonds, pecans or any other, very finely chopped 1/2 cup shredded coconut 1/2 cup dried mulberries, very finely chopped __ Directions: Make the caramel by blending together the dates, vanilla bean seeds, almond milk, coconut oil and lemon juice (if using) until smooth. Place the apples on popsicle sticks and swirl them in the date caramel. Alternatively you can use a small spatula to spread the caramel evenly around the apple. Coat the apples in the toppings and serve immediately.
