Ingredients: 4 cups cubed day-old bread. 2 large apples, peeled, cored, and sliced. 1/2 cup raisins. 4 eggs. 2 cups milk. 1 cup heavy cream. 1 cup granulated sugar. 1/4 cup unsalted butter, melted. 1/4 cup bourbon or dark rum. 1 teaspoon vanilla extract. 1/2 teaspoon ground cinnamon. 1/4 teaspoon nutmeg. Pinch of salt.
Instructions: Set the oven to 350F 175C and heat it up. Put the cubed bread, sliced apples, and raisins in a large bowl. Add the eggs, milk, heavy cream, sugar, melted butter, bourbon or rum, vanilla extract, cinnamon, nutmeg, and a pinch of salt to a different bowl and mix them together using a whisk. Make sure all the bread is covered with the wet mixture as you pour it over it. Allow the bread to soak up the liquid for 15 to 20 minutes. Place the mixture in a baking dish that has been greased. Bake for 45 to 50 minutes, or until the top is golden brown and the middle is set. Get the parfait glasses ready while the pudding is baking. Let the bread pudding cool a bit before putting the parfaits together after it's done. Put the bread pudding in parfait glasses and top with whipped cream or vanilla ice cream. Repeat the layers until the glasses are full. Add a dollop of whipped cream on top to finish. If you want, you can add more cinnamon or nutmeg as a garnish. Enjoy!
