Ingredients: 4 apples, peeled, cored, and diced. 1/4 cup maple syrup. 1 tsp vanilla extract. 1 tsp ground cinnamon. 1/4 tsp ground nutmeg. 2 tbsp cornstarch. 1 package vegan pie crust dough store-bought or homemade. 1 tbsp plant-based milk for brushing. 1 tbsp cane sugar for sprinkling.
Instructions: Preheat the oven to 375F 190C. In a saucepan, combine diced apples, maple syrup, vanilla extract, cinnamon, nutmeg, and cornstarch. Cook over medium heat until the apples are tender and the mixture is thickened, about 10 minutes. Remove from heat and let cool. Roll out the pie crust dough on a floured surface. Using a cookie cutter or a glass, cut out circles from the dough. Place a spoonful of the cooled apple filling onto half of each dough circle. Fold the dough over the filling to create a half-circle shape. Press the edges firmly to seal, then crimp with a fork. Brush the tops of the pies with plant-based milk and sprinkle with cane sugar. Transfer the pies to a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until golden brown. Remove from the oven and let cool slightly before serving.
