It had been almost exactly one year since we went to the apple orchard. The last time we were there, I was pretty darn pregnant.

These apple vanilla hand pies are a delightful vegan treat, perfect for snacking or dessert. The combination of sweet apples, warm spices, and fragrant vanilla encased in a flaky pie crust will surely satisfy your earthly cravings.
Ingredients: 4 apples, peeled, cored, and diced. 1/4 cup maple syrup. 1 tsp vanilla extract. 1 tsp ground cinnamon. 1/4 tsp ground nutmeg. 2 tbsp cornstarch. 1 package vegan pie crust dough store-bought or homemade. 1 tbsp plant-based milk for brushing. 1 tbsp cane sugar for sprinkling.
Instructions: Preheat the oven to 375F 190C. In a saucepan, combine diced apples, maple syrup, vanilla extract, cinnamon, nutmeg, and cornstarch. Cook over medium heat until the apples are tender and the mixture is thickened, about 10 minutes. Remove from heat and let cool. Roll out the pie crust dough on a floured surface. Using a cookie cutter or a glass, cut out circles from the dough. Place a spoonful of the cooled apple filling onto half of each dough circle. Fold the dough over the filling to create a half-circle shape. Press the edges firmly to seal, then crimp with a fork. Brush the tops of the pies with plant-based milk and sprinkle with cane sugar. Transfer the pies to a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until golden brown. Remove from the oven and let cool slightly before serving.

Instructions: Warm the oven up to 190C 375F. Apple slices, white sugar, brown sugar, flour, cinnamon, nutmeg, salt, and lemon juice should all be mixed together in a large bowl. Toss the apples until they are covered all over. In a 9-inch pie dish, put one pie crust. Put the apple mixture into the crust and make a small mound in the middle. Crimp the edges of the second pie crust to seal it around the pie. Make a few holes in the top crust to let the steam escape. After the oven is hot, bake the pie for 45 to 50 minutes, or until the crust is golden brown and the filling is bubbling. Let the pie cool down for at least 30 minutes before you serve it. Enjoy while still warm!

The pie is quite crispy and it has a balanced sweetness, plus a little bit sourness from the apple slices. Topped with the "Chocolate Hearty" vegan snowball, which is also a brand of vegan ice cream by @green_common .
