Warmer Than the Lowest Levels of the Seam Viennese Potato Salad

My Oma always made this for me when I would visit. It is one of the first things I had her teach me to make when I moved into an apartment. It is so incredibly good on a winter day!
6 cups of potatoes (peeled and cut up into chunks no bigger than the first joint of your thumb)
Salt
4-6 strips of bacon, cut up
1/2 cup chopped green or yellow onion
1.5 to 2 tablespoons flour
1/3 cup vinegar (apple cider is best)
2/3 cup water
Place the potato pieces in a large sauce pan and just cover with water. Add a little salt to the water. Bring to a boil and cook the potatoes until they just fall off the end of a knife (about ten minutes). Drain, return to the pan, and cool slightly.
While the potatoes are boiling, fry the bacon in a frying pan until they just begin to get crispy. Remove the bacon pieces to a plate with a paper towel, keeping the grease. Fry the onions in the grease over medium to medium high heat until tender. Sprinkle the flour over the onions and grease just to thicken it to make an extremely light roux. Pour in the vinegar and water all at once. Bring to a boil, stirring so it thickens. When it has thickened, pour over the potatoes, and then sprinkle the bacon on top. Toss to mix the dressing and potatoes. Add salt and pepper to taste. Serve warm.

I found this recipe because I had two opened bottles of fancy brown mustard in my fridge. I had two large bags of onions as well due to a grocery order mixup on my part. This is what came up when I did an internet search on using up these ingredients.
It is a good winter dish and the house smells amazing while it cooks. The onions turn sweet during the baking process!
I make a modified version of the Barefoot Contessa’s recipe here at the Food Network:
I use russet potatoes because that is what I have in the pantry usually. I double her amount of mustard and olive oil so that everything gets coated by the sauce. I cook it at a lower temperature (375 F) for an hour and 20 minutes because otherwise my oven starts to char the onions rather than caramelize them.
Ingredients
2 1/2 pounds potatoes
2 yellow onions
6 tablespoons good olive oil
4 tablespoons fancy brown mustard (Dijon or spicy brown both work)
Kosher salt (but ordinary works too if Snow cut your salt ration)
1 teaspoon freshly ground black pepper
Instructions
Slice the onions in half, and then cut the halves into 1/4” slices. If you are using russet potatoes, cut them into large bite-size pieces. If you are using baby red or Yukon gold potatoes, follow her instructions. Mix everything on your biggest rimmed baking sheet. Bake as above, stirring every 15 or 20 minutes. I like a big bamboo stir fry spatula for stirring.
