Thai food at home: It was fun to cook up a Thai themed meal for Pinoy friends who spent several years living in Thailand. It was my first time making pandan wrapped chicken (using free range native chicken from Laguna). Although I have yet to master folding the leaves perfectly, the dish was very well received - something a cook always likes to witness. In fact, every morsel of chicken was unwrapped and consumed along with the accompanying dipping sauce. But the rice was one unfortunate part of the meal which needed some rescuing. I had gotten a little distracted while chatting with my friends and misjudged the amount of water in the pot. Too little water = uncooked crunchy rice. Yucky. Thankfully, one of my friends quickly remedied the situation so that we were still able to sit down for the meal before anyone got too "hangry". Good thing Pinoys are used to eating room temperature food. In the end, our lovely chatter and enjoyment together made up for that minor mishap.
