These ricotta and arugula stuffed shells with meat sauce are a comforting and filling pasta dish. The creamy ricotta, peppery arugula, savory meat sauce, and gooey cheese all work well together.
Ingredients: 1 box jumbo pasta shells. 1 lb ground beef. 1 onion, diced. 3 cloves garlic, minced. 1 can 28 oz crushed tomatoes. 1/4 cup tomato paste. 1 tsp dried oregano. 1 tsp dried basil. Salt and pepper to taste. 2 cups ricotta cheese. 1 cup grated Parmesan cheese. 2 cups chopped arugula. 1 egg. 2 cups shredded mozzarella cheese.
Instructions: Preheat oven to 375F 190C. Cook jumbo pasta shells according to package instructions until al dente. Drain and set aside. In a large skillet, cook ground beef over medium heat until browned. Add diced onion and minced garlic, cook until onion is translucent. Stir in crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and pepper. Simmer for 10 minutes. In a mixing bowl, combine ricotta cheese, Parmesan cheese, chopped arugula, and egg. Mix well. Stuff each cooked pasta shell with the ricotta mixture. Spread a layer of meat sauce in the bottom of a baking dish. Arrange stuffed shells on top. Cover with remaining meat sauce and sprinkle shredded mozzarella cheese on top. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes or until cheese is bubbly and golden brown. Serve hot and enjoy!
