I stopped roasting whole chicken at home. Why, when Sam's Club is only 5 minutes away? It saves me time and money and one of the few short cuts I have when preparing his meals. I serve roasted chicken several ways: as a main dish with side dishes or with garden salad, chicken hash, and soup. Also, you can use the carcass in making broth. Simply place it in a large pot. Add garlic cloves, quartered onion, celery stick, chopped carrot, 1/2 tsp. whole black pepper, 2 bay leaves, 3 sprigs fresh rosemary) if you have it). For spicy Asian flavor: replace Rosemary with 1 stalk lemon grass and add 4 fresh Thai hot peppers. Add 3 quarts water and 1 TBSP. Coarse #celticseasalt. Boil and simmer for 2 hours.
