Put your leftover veggies in a large Dutch oven with 2tbs of butter, allow it to come back to life! I used carrots, parsnips and corn. Take a few heaping tablespoons of mashed potatoes, add them to the pot and mix well with your veggies. Add 3-4 boxes of low sodium chicken stock. Take left over turkey, shred it with your hands and add it right you your pot. Add your seasonings lightly; salt, pepper, various Italian seasonings. Bring to a boil and add your egg noodles. Taste test and serve! Tip #13 when using leftovers always season lightly, it’s easy to over season when you forget your food is already pre-seasoned.
