Ingredients: 1 lb chicken breasts, thinly sliced. 1 tablespoon sesame oil. 4 cloves garlic, minced. 1 tablespoon ginger, minced. 4 cups chicken broth. 1 cup shiitake mushrooms, sliced. 2 cups bok choy, chopped. 2 tablespoons soy sauce or coconut aminos. 1 tablespoon fish sauce. 1 tablespoon rice vinegar. 1 teaspoon sriracha optional. Salt and pepper to taste. Sliced green onions, for garnish. Sesame seeds, for garnish.
Instructions: In a large pot, heat sesame oil over medium heat. Add garlic and ginger, cook for 1 minute until fragrant. Add chicken and cook until browned, about 5 minutes. Pour in chicken broth, soy sauce or coconut aminos, fish sauce, rice vinegar, and sriracha if using. Bring to a simmer. Add mushrooms and bok choy, simmer for 10-15 minutes until vegetables are tender and chicken is cooked through. Season with salt and pepper to taste. Serve hot, garnished with sliced green onions and sesame seeds.
