A flavorful and healthy chicken recipe featuring juicy chicken breasts cooked with cherry tomatoes, garlic, and fresh basil in a savory balsamic glaze.
Ingredients: 4 boneless, skinless chicken breasts. 1 tablespoon olive oil. Salt and pepper to taste. 1 cup cherry tomatoes, halved. 2 cloves garlic, minced. 1/4 cup fresh basil leaves, chopped. 1/4 cup low-sodium chicken broth. 1 tablespoon balsamic vinegar.
Instructions: Add salt and pepper to the chicken breasts. Warm up the olive oil in a big pan over medium-high heat. This will take about 6-7 minutes per side. The chicken breasts should be golden brown and cooked all the way through. Take it out of the pan and set it aside. Put garlic and cherry tomatoes in the same pan. For about two to three minutes, cook until the tomatoes start to get soft. Add the chicken broth, basil, and balsamic vinegar and mix them in. Allow the flavors to blend for two more minutes. Put the chicken breasts back in the pan and top them with the tomato basil mixture. Add one more minute of cooking to heat everything through. Serve hot, and if you want, top with more fresh basil.
