Tried a lot of new things in Bali, and one of those things is tempeh. Another soy product, but much more filling than tofu. I had it in almost every meal while I was there and am excited to incorporate it into my meals at home. To make the tempeh: • cut into small cubes or strips • throw into a pan to fry • add soy sauce, chili sauce and oil • cook until golden brown And unlike tofu, tempeh catches a lot of flavor. Throw this in with a garden salad like I did above. I added sliced cucumbers and my own little concoction for the dressing (Dijon Mustard, Rice Vinegar, Olive Oil and 2 cloves of Minced Garlic). Great as a side, or add some meaty mushrooms and chickpeas for a full meal 😋
Homemade asian veg broth Serves 2 Ingredients • 1L water or vegetable stock • 1 bunch bok choy, cut into strips • 1 bunch choy sum or chinese broccoli • 3 spring onions, sliced finely • 2 packets instant ramen, flavour sachets discarded • 2 cloves garlic, minced • pinch of chinese five spice • 1-2 tbsp sesame oil • 2 tbsp soy sauce • 1/2 tsp chilli powder (optional) Method 1. Once you have cut up all your veg, pop a medium saucepan over medium heat and add in the sesame oil, garlic and spring onions. Saute for 30 seconds, whilst stirring. 2. Pour in the water or vegetable stock and stir to combine. Add in the soy sauce, five spice, and chilli powder and season to taste with salt and pepper. Simmer for 1-2 mins. 3. Place in your green veg and the ramen noodles and simmer whilst stirring until the noodles are soft and the veg are tender. 4. Ladle into bowls and enjoy! I had a cup of peppermint tea with this and it was delicious!
