🌶Asian Style Quinoa & Kale Salad 🌶 This makes a massive salad bowl and you could also make this a stir fry but it's better to eat your veggies raw ⚡️😐 1 Cup cooked quinoa 1 small bunch of kale 1 red capsicum 1 small mango 2 carrots 2 large celery stalks 1-2 white onion 1/2 cup cashews 1/2 cup edamame Dressing: 4 TBSP soy sauce/tamari/aminos 2 TBSP red chili pepper flakes 2 limes juiced 1 small chunk of ginger root grated 1/4 cup basil leaves Blend all dressing ingredients together. Tear up the kale into bite size pieces and pour half the dressing over it and massage for a little bit. Cook quinoa, crush up cashews a bit and cut up all remaining ingredients however you want. Toss everything together with rest of the dressing! 🌿Would be awesome with cilantro, tofu and sweet chilli sauce but I didn't have any!
