Sungat diya gahori" or pork cooked in bamboo tubes . This is a common method of cooking meat among various tribes of Assam .Bamboo trees grows abundantly here . The meat is just marinated with ginger ,garlic ,chillies and herbs and cooked in these bamboo tubes . The inside layer of bamboo gives a beautiful aroma to the pork too. Tamul paan ( areca nut and betel leaves ) is an inseparable part of Assamese social life . Every good meal has to be followed by a mouthful of "tamul paan" . Every guest is offered tamul paan ,as a mark of respect n love . Invitation to marriage ,religious ceremonies are traditionally given with tamul paan which is a mark of respect . Actually ,we don't need much reason to chew some tamul and paan !! Our Assamese tamul is not same as "supari" ,it has its own unique taste . Take a piece of tamul n paan with little bit of "sun " or lime and just keep chewing ..Enjoy the kick . Repost from @geeta_4u - Small "bhangun " fishes cooked with Omora ( hog plums ) and Matikaduri leaves ( Sessile joyweed ) . Some simple "mashor Jul " or fish curry we cook need no effort at all ,but tastes superb !! A bowl of this simple dish will definitely give u a feeling of satisfaction . The Omora or hog plums and Matikaduri plants grow wildly in households and forests here . In our villages people just collect these easily , catch some fresh fish from ponds and cook a perfect , blissful meals with this . And ,we ,living in a urban jungle ,hunt these authentic Assamese stuff in rural roadside bazaars ,and thts an irony . I love to keep the things authentic n basic ,so no fuss while cooking it . Just clean the fishes ,sprinkle haldhi n salt . Give a quick fry in a pan with hot mustard oil . Heat another tsp of oil in a wok and add a tsp of fenugreek seeds . As it splutters , add the Matikaduri leaves and saute . Add 3 to 4 omoras to it after making splits on them. Add haldhi n salt to taste . Add 3 cups of water n bring it to boil . As it boils ,add the fish to it . Simmer for 10 mins .Serve piping hot with rice .
