I really want to make Yujikiri content, but I am quite afraid of people who would want to debunk them---Say stuff like that they're one-sided, That Kirito doesn't care for Eugeo enough or in THAT way, that Yujikiri is just a queerbait/fujoshi fuel, etc....That kinda critique is even scarier than having haters, honestly. I wouldn't know what to do if I came across people like that.

My honest advice: Continue to Create Your Favorite Ship Content And Ignore Those People. This imo applies to all Straight ships/ mlm ships/ wlw ships.
Just so you know, even among popular straight ships in anime/manga, there are beautiful male/female relationships that were alluded to as true soulmates by the authors yet they don't end up together and they are with other characters instead (I'm looking at you Bleach), for old school fans there were Black Cat, Rurouni Kenshin who got the straight soulmates separated by death. There are cases where ship already has adopted child or born child together and yet they still end up with other characters. In mlm ships there are already a lot of ships that got separated by death like Kaworu & Shinji (Evangelion), Ash & Eiji (Banana Fish), or not canon regardless of how much the story revolved about their entertwined relationship (Naruto & Sasuke anyone? Besides I have heard a lot more fair criticism on how rushed or toxic some canon ships of Naruto were developed). In wlw ships I'd never stop feeling sad about Ymir & Historia.
Do that make people stop shipping them? NOPE. That's because to shippers the beauty of their relationship speaks more than canon and fans feel a beautiful & healthy or better developed relationship in them and they enjoy the possibilities/AUs where the ship can be happy regardless of authors making them canon or not. Fandom shipping was originally created so fans can ship and create the content we want to see without being bounded by canon. Fandoms should not be here to fight against the author's story or destroy each other over shipping, we should be positive and just enjoy the ships that we love.
As for SAO, please don't fear creating contents. I have even seen artists who ship the girls together (Asuna x Alice, Asuna x Sinon, Asuna x Yuuki, etc.) on twitter and nobody batted an eye or came to comment like things you said. There are a lot of yujikiri fanworks on there too and in case there are homophobic comments or "cAnOn" entitled comments they would get schooled from fans who know better. (Below are just screenshots of the fanart tweets as an example, not the actual fanarts)
