Prepare the raw tartlet crust by mixing together : ⠀ - 30g quick oats⠀ - 30g dried sultanas ⠀ - 1 tbsp tahini (about 15g) ⠀ - 1 tbsp olive oil ⠀ 2. Then spread it in a tartlet tin and smooth using a spatula and your hands. Leave it to set in the fridge for about an hour or so. ⠀ 3. Preheat the oven to 200°C. ⠀ 4. Slice 150g aubergine lengthwise, and place them on a baking tray covered with a sheet of baking paper. Add pink salt and rub them with a garlic clove. ⠀ 5. Then add some olive oil, black pepper, dry shallot, and origan.⠀ 6. Bake for about 20-30 minutes. ⠀ 7. Make your ‘aubergine roses’ tartlet by placing halves of each rolled aubergine slice on top of the raw crust. ⠀ 8.
