Kaiserschmarrn is a delightful Austrian dessert pancake that's sweet, fluffy, and torn into pieces while cooking. It's traditionally served with plum jam or applesauce and dusted with powdered sugar.
Ingredients: 2 cups all-purpose flour. 1/4 cup granulated sugar. 1/2 teaspoon salt. 4 large eggs. 1 cup milk. 1/4 cup unsalted butter. 1/4 cup raisins. Powdered sugar, for dusting. Plum jam or applesauce, for serving.
Instructions: Whisk the flour, sugar, and salt together in a bowl. Whisk the eggs and milk together in a different bowl until they are well mixed. Add the wet mixture to the dry mixture slowly while stirring it together. Keep doing this until you get a smooth batter. Put the butter in a big pan and melt it over medium-low heat. Put the batter into the pan and then sprinkle the raisins on top of it all. Leave the pancake to cook for 5 to 7 minutes, or until the bottom is golden brown and the edges begin to set. Scramble the pancake into big pieces with a spatula. Keep cooking and stirring the pancake every now and then until it's done and golden.
