A tasty vegan appetizer with creamy guacamole tucked back into its avocado shell, making a dish that looks good and tastes great.
Ingredients: 2 ripe avocados. 1 small tomato, diced. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1 jalapeno pepper, seeded and finely chopped. 1 lime, juiced. Salt and pepper to taste.
Instructions: Cut the avocados in half and remove the pits. Scoop out the flesh of the avocados into a bowl, leaving a thin layer around the edges. Mash the avocado flesh with a fork until smooth or chunky, according to preference. Add diced tomato, red onion, cilantro, jalapeno, and lime juice to the mashed avocado. Mix well. Season with salt and pepper to taste. Carefully spoon the guacamole mixture back into the avocado shells. Serve immediately or chill in the refrigerator until ready to serve.
