These Crispy Baked Avocado Fries taste great and are better for you than regular fries. The inside is creamy avocado, and the outside is crispy. This is a great snack or side dish. When paired with a spicy chipotle dipping sauce, they taste great!
Ingredients: 2 ripe avocados. 1 cup panko breadcrumbs. 1/2 cup grated Parmesan cheese. 1 teaspoon garlic powder. 1/2 teaspoon paprika. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 2 eggs. Cooking spray. 1/2 cup mayonnaise. 2 tablespoons adobo sauce from canned chipotle peppers. 1 tablespoon lime juice. 1/2 teaspoon cumin. 1/2 teaspoon chili powder.
Instructions: Turn on your oven and heat it up to 425F 220C. To remove the skin from each avocado slice, first cut them into thin slices. Grated Parmesan cheese, garlic powder, paprika, salt, and black pepper should all be mixed together in a shallow bowl. Mix the eggs in a different bowl. Allow some of the egg mixture to drip off the top of each avocado slice as you dip it in it. Cover the avocado slice with the breadcrumb mixture and press it down gently to make the coating stick. Cover the avocado slices with the sauce and put them on a baking sheet lined with silicone baking mats or parchment paper. Cover the avocado fries with cooking spray. This will help them get crispy in the oven. Put the fries in the oven for 15 to 18 minutes, or until they are golden brown and crispy. Start making the chipotle dipping sauce while the avocado fries are in the oven. Put the mayonnaise, adobo sauce, lime juice, cumin, and chili powder in a small bowl and mix them together well.
