Vegan Mint Avocado Fudge. Yum.😋 Keto and Paleo made with all natural food and no processed sugar.✨ I’ve been working on this treat over the last month and finally got the flavor and consistency to a delicious mouthwatering bite! The last little hurdle is getting the chocolate top layer and bottom avocado layer to stick together a little more. If anyone figures that out, please comment!! All you need for this whole food natural fudge are avocados, coconut oil, nut butter (almond or cashew- I used almond), honey, peppermint and vanilla extract, flaxseed meal (optional), walnuts (optional), maple syrup and unsweetened cacao chips. Now let’s getting to creating! Ingredients: Mint Cream Layer: 2 medium ripe avocados 1/2 cup liquid coconut oil 2 Tbs cashew or almond butter 3 Tbs honey 3 tsp peppermint extract 2 Tbs vanilla extract Dash of pink sea salt 2 Tbs flaxseed meal Ingredients for the chocolate layer: 1/2 cup 100% unsweetened cacao chips 2 Tbs cashew or almond butter 6 Tbs maple syrup 1 Tbs vanilla extract 3 Tbs chopped toasted walnuts (optional) Instructions: To make the mint layer: Blend all ingredients, except the flaxseed meal, in a food processor or powerful blender until smooth. Spread mint cream into a 5x5" or 6x4" dish lined. Sprinkle flaxseed meal over top. Freeze 30 minutes until set. To make the chocolate layer: Melt cacao chips on low on the stovetop, stirring constantly. When the chips become smooth and liquify, add nut butter, vanilla extract, and maple syrup, and stir on low until blended and smooth. Toast walnuts in toaster oven for 5 minutes, until they are browned and almost buttery. Spread chocolate over the frozen mint layer and sprinkle walnuts on top. Freeze or refrigerate again until set.
