Ingredients: 1 ripe avocado, pitted and peeled. 1/2 cup fresh spinach leaves. 1/4 cup fresh basil leaves. 1/4 cup fresh parsley leaves. 2 cloves garlic, minced. 2 tablespoons lemon juice. 2 tablespoons olive oil. 1/4 cup plain Greek yogurt gluten-free. Salt and pepper to taste.
Instructions: In a food processor or blender, combine the avocado, spinach, basil, parsley, minced garlic, and lemon juice. Blend until the mixture is smooth and well combined. With the blender running, slowly drizzle in the olive oil until the dressing reaches your desired consistency. Add the Greek yogurt and continue blending until everything is fully incorporated.
