Ingredients: 1 package refrigerated pie crusts 2 crusts. 4 slices of bacon, cooked and crumbled. 2 cups diced apples about 2 medium apples. 1/4 cup granulated sugar. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1 tablespoon all-purpose flour. 1 egg, beaten for egg wash.
Instructions: Preheat your oven to 375F 190C. Unroll the refrigerated pie crusts on a lightly floured surface. Using a 4-inch round cutter, cut out circles from the pie crusts. You should get about 8 circles from each crust. In a mixing bowl, combine the diced apples, sugar, cinnamon, nutmeg, and flour. Mix well until the apples are evenly coated. Place a spoonful of the apple mixture onto the center of each pie crust circle. Sprinkle the crumbled bacon on top of the apple mixture on each circle. Fold each circle in half to create a half-moon shape, then use a fork to crimp the edges and seal the pies. Place the mini pies on a baking sheet lined with parchment paper. Brush the tops of the pies with the beaten egg to give them a golden finish. Using a sharp knife, make a small slit on the top of each pie to allow steam to escape during baking.
