Instructions: Preheat the oven to 375F 190C. Roll out the pre-made pie crusts on a floured surface. Using a round cookie cutter, cut out small circles from the pie crusts. In a bowl, mix the lemon curd, granulated sugar, and lemon zest. Place a small spoonful of the lemon curd mixture onto the center of half of the pie crust circles. Place the remaining pie crust circles on top of the lemon curd circles. Use a fork to crimp the edges of the pies, sealing the filling inside. Beat the egg and brush it over the tops of the mini pies for a golden finish. Place the mini pies on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15-20 minutes, or until the pies are golden brown. Remove from the oven and let them cool slightly. Dust the mini lemon hand pies with powdered sugar before serving.
