There are so few of these tea trees left in the true cliff terroir (Zheng Yan), they also demand the highest of all Ming Cong varietals. Bai Ji Guan, means white rooster comb, is an albino cultivar. It’s reluctance to oxidize and ferment grants it the a floral but highly umami profile. The iconic cliffs of Wuyishan give their name to "The Cliff Teas" which grow within their shadows. Also called Wuyi Yan Cha or Rock Tea, Da Hong Pao (Big Red Robe), Tieluohan (Iron Arhat), Bai Jiguan (White Cockscomb), Shui Jin Gui (Golden Water Turtle), and Rou Gui (Cassia or Chinese Cinnamon) are the most notable varieties, each with their own distinct qualities of aroma and taste. All can be traced back to a variety like Shui Xian, but terroir and management of the plants for many generations has resulted in these stunning and world famous teas all a little different. Dah Hong Pao traces its origins to a single tree from centuries ago. A true Cliff Tea grows in rich mineral soil, within a limited area, beneath or in view of the cliffs, which are in northern Fujian Province, China. All are dark heavily fermented for oolongs, have a twisted leaf style, and are food fired and have taste qualities reminiscent of stone fruit.
