Old-Fashioned Rice Pudding Recipe - Rick Rodgers
An old-fashioned custard-style rice pudding that has been in our family for generations.
Just put in the oven, because I couldn't resist! With some leftover jasmine rice that needed used up.
It sounded enough like the type that I also grew up with, that I decided not to mess too much with a classic. (Besides swapping half the sugar for Splenda, because my diabetic ass also couldn't resist. 🙄 Not quite as much quick release carbohydrate for the good old Novorapid to keep up with!)
I also added a little sprinkle of ground nutmeg along with the cinnamon on top, because I usually do with anything like this. Learned from my Nana, come to think about it--who was also a major source of my own Too Much Gene, in general. 😅 Decided to keep it simple and step away from the spice rack after that, though.
I was glad to run across this particular recipe, but also felt like a dope for never looking into exactly WHY setting the pan in a bigger pan hot water bath is the classic approach to baked custards. When I had put off making any on many occasions, because that was just too much hassle to mess with and/or we just didn't have a good size of outer pan to use for the water bath.
Turns out, that's not some type of magical custard anti-curdling/burning device! 🤔 The water bath may have been necessary as a temperature control strategy before ovens had any built in, but now? You can just set the oven temperature lower, and avoid the issue without fooling with additional pans of scalding water.
Which certainly makes sense, now that someone points out a bit of food science there. In a little while, we'll see how well it works in practice!
First attempt @ baked pear custard. Rating this 8/10: everything went smoothly except for the too ripe (and too wet) pears. Never set properly because of those overly moist suckers 😥
