Ingredients: 1 cup grated zucchini. 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/4 cup unsalted butter, melted. 1/4 cup plain Greek yogurt. 1/4 cup milk. 1 egg. 1 teaspoon vanilla extract. 1/2 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup fresh blueberries. 1/4 cup white chocolate chips.
Instructions: Preheat your oven to 350F 175C and grease a donut pan. Place the grated zucchini in a clean kitchen towel and squeeze out the excess moisture. In a mixing bowl, combine the grated zucchini, flour, sugar, melted butter, Greek yogurt, milk, egg, vanilla extract, baking powder, baking soda, and salt. Mix until well combined. Gently fold in the fresh blueberries into the batter. Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full. Bake in the preheated oven for 12-15 minutes or until the donuts are lightly golden and a toothpick inserted into the center comes out clean. Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. In a microwave-safe bowl, melt the white chocolate chips in 20-second intervals, stirring in between until smooth. Drizzle the melted white chocolate over the cooled donuts. Let the white chocolate set for a few minutes before enjoying your baked blueberry zucchini donuts!
