These baked ham and egg cups are a delightful and protein-packed breakfast option. They are easy to make and perfect for a quick and satisfying morning meal.
Ingredients: 6 slices of ham. 6 large eggs. 1/2 cup shredded cheddar cheese. Salt and pepper to taste. Chopped fresh chives optional, for garnish.
Instructions: Preheat your oven to 375F 190C. Take a muffin tin and lightly grease 6 cups with non-stick cooking spray. Line each greased muffin cup with a slice of ham, ensuring it covers the bottom and sides, creating a ham cup. Crack one large egg into each ham cup. Sprinkle shredded cheddar cheese over the eggs in each cup. Season with salt and pepper to taste. Bake in the preheated oven for 15-18 minutes or until the egg whites are set, and the yolks are still slightly runny. Remove from the oven and let cool for a minute or two. Gently run a knife around the edges of each ham and egg cup to loosen them from the muffin tin. Carefully lift the ham and egg cups out of the muffin tin and place them on a serving platter. Garnish with chopped fresh chives if desired. Serve hot and enjoy your delicious baked ham and egg cups!
