I found the original just a touch too sweet, so my mom and I decided to try it with semi-sweet chocolate instead of white. That tasted wonderful, but a lot of he fluffy texture was lost - it was about the same density as a normal cheesecake. Now, whether that was because of the chocolate or user error (over-mixing?), I don’t know.

The next attempt was half white chocolate and half semi-sweet. I think this one was my favourite.

I don't know if I'll ever be able to go back to making cheesecake without shredded coconut in it... It's a texture thing, really - not the little coconut bits themselves, but the cheesecake as a whole just feels more... moist? Somehow?
