This moist and tasty banana bread is made with coconut flour and is great for people on a paleo or gluten-free diet. To make it sweet, ripe bananas, honey or maple syrup, and a hint of cinnamon and vanilla are mixed in.
Ingredients: 4 ripe bananas, mashed. 4 large eggs. 1/2 cup coconut flour. 1/4 cup coconut oil, melted. 1/4 cup honey or maple syrup. 1 teaspoon vanilla extract. 1 teaspoon baking soda. 1/2 teaspoon cinnamon. Pinch of salt.
Instructions: Warm the oven up to 175F 350C. Use coconut oil to grease a 9x5-inch loaf pan. Eggs, honey or maple syrup, mashed bananas, and vanilla extract should all be mixed together in a large bowl. To the banana mix, add baking soda, cinnamon, salt, and coconut flour. Mix it well until there are no more lumps. Spread out the batter in the loaf pan that has been prepared. After the oven is hot, bake it for 40 to 45 minutes, or until a toothpick stuck in the middle comes out clean.
