Ingredients: 4 medium sweet potatoes. 1/4 cup pure maple syrup. 2 tablespoons bourbon. 2 tablespoons melted coconut oil. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. 1/4 teaspoon black pepper. Chopped fresh parsley for garnish, optional.
Instructions: Turn on your oven and heat it up to 375F 190C. After giving the sweet potatoes a good scrub, poke them several times with a fork. Right on the oven rack, put the sweet potatoes. Bake for 45 to 55 minutes, or until a knife can go through them easily. Make the glaze while the sweet potatoes are in the oven. Put the maple syrup and bourbon in a small saucepan and mix them together. Simmer on low heat for 5 to 7 minutes, stirring every now and then, until the mixture gets a little thicker. Add the ground cinnamon, salt, and black pepper to the glaze after taking it off the heat. Put away. Take the sweet potatoes out of the oven when they're done baking and let them cool down a bit before you can handle them. Spread the sweet potatoes out in a baking dish with the cut sides facing up. Use a lot of the bourbon maple glaze to cover the sweet potatoes, making sure it covers them all. Put the glazed sweet potatoes back in the oven and bake for another 15 to 20 minutes, or until the edges are caramelized and a little crispy.
