Ingredients: 2 cups almond flour. 1/2 cup coconut flour. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 cup honey. 1/2 cup melted coconut oil. 4 large eggs. 1 teaspoon vanilla extract. 1/2 cup unsweetened applesauce. 1/4 cup almond milk.
Instructions: Preheat your oven to 350F 175C and grease a 9-inch round cake pan. In a large mixing bowl, whisk together almond flour, coconut flour, baking powder, baking soda, and salt. In another bowl, combine honey, melted coconut oil, eggs, vanilla extract, applesauce, and almond milk. Mix well. Pour the wet mixture into the dry ingredients and stir until well combined. Pour the batter into the greased cake pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once cooled, you can optionally drizzle additional honey on top for extra sweetness.
