Ingredients: 1 cup spelt flour. 1/2 cup unsalted butter, softened. 1/4 cup powdered sugar. 1/2 tsp ground cinnamon. 1/4 tsp salt. 1/2 tsp vanilla extract. 2 tbsp milk. 1/4 cup granulated sugar for rolling.
Instructions: In a mixing bowl, cream the softened butter and powdered sugar together until smooth. Add the ground cinnamon, salt, and vanilla extract to the butter mixture. Mix until well combined. Gradually add the spelt flour to the mixture and mix until the dough forms. If it's too dry, add milk, one tablespoon at a time, until the dough is smooth and holds together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Preheat your oven to 350F 175C and line a baking sheet with parchment paper. Take the chilled dough out of the refrigerator and roll it out on a floured surface to about 1/4 inch thickness. Use snowflake-shaped cookie cutters to cut out the cookies and transfer them to the prepared baking sheet. Gather the remaining dough, re-roll it, and continue cutting until all the dough is used. In a small bowl, place the granulated sugar. Dip each cookie into the sugar to coat both sides. Place the sugar-coated cookies back on the baking sheet and bake in the preheated oven for 10-12 minutes or until the edges turn golden brown. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
