Ingredients: 2 cups grated zucchini. 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/4 cup brown sugar. 1/2 cup chocolate chips. 1/2 cup vegetable oil. 2 eggs. 1 tsp vanilla extract. 1/2 tsp baking soda. 1/2 tsp baking powder. 1/2 tsp salt. 1/2 tsp ground cinnamon.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, salt, and ground cinnamon. In another bowl, beat the eggs and add the vegetable oil and vanilla extract. Mix until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the grated zucchini and chocolate chips. Fill each muffin cup with the batter, about 3/4 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
