These tasty mocha cupcakes have a coffee bark crunch on top, so you can enjoy the rich flavors of mocha. Great for people who like coffee!
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup cocoa powder. 1 1/2 teaspoons baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup brewed coffee, cooled. 1/2 cup buttermilk. For the Coffee Bark:. 1/4 cup semisweet chocolate chips. 1 tablespoon instant coffee granules. 1/4 cup chopped roasted coffee beans. 1/4 teaspoon sea salt.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Whisk the flour, cocoa powder, baking powder, baking soda, and salt together in a bowl. Put away. Melt the butter and mix it with the sugar in another bowl until it is light and fluffy. One egg at a time, making sure to mix well after each addition. Add the vanilla extract and mix well. Add the dry ingredients and the brewed coffee one at a time, beginning with the dry ingredients and ending with them. Don't mix any further than that. Last, add the buttermilk and mix it in slowly until the batter is smooth. Fill each cupcake liner about two thirds of the way to the top with batter. In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. After taking the cupcakes out of the oven, let them cool in the pan for a few minutes. Then, move them to a wire rack to finish cooling. Make the Coffee Bark while the cupcakes cool: For 30 seconds at a time, stir the semisweet chocolate chips in a bowl that can go in the microwave until the mixture is smooth. Add the instant coffee granules and mix them in. Then, spread the mixture out on a plate or tray lined with parchment paper. Mix the sea salt and chopped roasted coffee beans together and then sprinkle them on top of the melted chocolate. After the bark has cooled and hardened for 15 to 20 minutes, break it up. Put the coffee bark pieces on top of the cupcakes once they are completely cool. Enjoy your Mocha Cupcakes with Coffee Bark after you serve them!
