Ingredients: 8 oz pasta. 2 tbsp olive oil. 1 lb mushrooms, sliced. 3 cloves garlic, minced. 1/4 cup balsamic vinegar. 1/2 cup vegetable broth. Salt and pepper to taste. Fresh parsley for garnish. Grated Parmesan cheese for serving optional.
Instructions: Cook pasta according to package instructions until al dente. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and cook until they release their moisture and become golden brown, about 5-7 minutes. Add minced garlic and cook for another 1-2 minutes until fragrant. Pour in balsamic vinegar and vegetable broth, and stir to combine. Bring to a simmer and let it cook for 5 minutes until slightly reduced. Season with salt and pepper to taste. Add cooked pasta to the skillet and toss until well coated with the mushroom balsamic sauce. Garnish with fresh parsley and serve hot. Optionally, sprinkle with grated Parmesan cheese before serving.
