Ingredients: 2 ripe bananas. 1/4 cup granulated sugar. 1/4 cup brown sugar. 1/4 cup unsalted butter, melted. 1 egg. 1 teaspoon vanilla extract. 1 1/2 cups all-purpose flour. 1 1/2 teaspoons baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/4 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 cup buttermilk. Oil for frying vegetable or canola. Powdered sugar, for dusting. For Homemade Ginger Soda:. 1 cup ginger syrup. 2 cups soda water. Lime wedges, for garnish. Ice cubes.
Instructions: In a bowl, mash the ripe bananas until smooth. To the mashed bananas, add vanilla extract, melted butter, brown sugar, granulated sugar, and egg. Blend until thoroughly blended. Mix the all-purpose flour, baking soda, baking powder, salt, ground nutmeg, and cinnamon in a different bowl. Add the dry ingredients to the banana mixture gradually, starting and ending with the dry ingredients and alternating with buttermilk. Blend until barely combined. In a deep pan, heat the oil to 350F 175C. Loads of the banana donut batter into the heated oil by spoonfuls, and cook for two to three minutes on each side, or until golden brown. blot with paper towels. While still warm, sprinkle powdered sugar over the banana donuts. In a pitcher, combine soda water and ginger syrup to make homemade ginger soda. Garnish the banana donuts with ice cubes and lime wedges and serve them with homemade ginger soda.
