Enjoy the unique mix of flavors in this blackcurrant banana ice cream that has coffee in it. The sweet blackcurrants, creamy bananas, and strong coffee all work well together in this tasty frozen treat.
Ingredients: 3 ripe bananas, sliced and frozen. 1 cup blackcurrants, fresh or frozen. 2 tablespoons instant coffee granules. 1/4 cup honey or maple syrup. 1/2 cup coconut milk. 1 teaspoon vanilla extract.
Instructions: Frozen bananas, blackcurrants, instant coffee grounds, honey or maple syrup, coconut milk, and vanilla extract should all be put into a blender. To make it smooth and creamy, scrape down the sides of the bowl as needed. Put the mixture in a container that can go in the freezer. Put it in the freezer for at least 4 hours, or until it gets firm. Let the ice cream sit at room temperature for a few minutes to soften a bit before you serve it. If you want, you can serve ice cream scoops with extra blackcurrants or a drizzle of honey on top.

The first impression is always true
After catching up on some much needed sleep it was time to take a look out of the window and discover an entirely new part of the world at day light. The night before I had already had a small tour around town to meet some of the people who had organized the project I was going to be a part of.
However, now was the time to see what this city actually looked like. The first look out of my bed was a confused on though. I had an appartment to my own with a nice host family sleeping in another building. I had no idea how this whole bathroom thing here worked since it’s quite different from Western standards... the only thing I was quite certain about was that I had to shower with a bucket... definitely a new experience.
Then I was treated with this amazing lunch by my host family and I just knew that this day would be amazing (love goes through the stomach after all)
My host and I took an alternative transportation device into the city which allowed me to capture some impressions on the street. I decided very quickly that I wouldn’t ever drive here in Indonesia. Otherwise the streets are ruled by motorcylces and cars that are trying to prove who of them can survive the most dangerous driving maneuvers.
The first point on our trip was the mobile store where I could get a new SIM.card (awesomeeee)
Second was Losari Beach which is a Makssar Landmark. The beach boulevard is filled with little stalls selling street food snacks (more on that later...)
Also you can find Fort Rotterdam there, a reminder of the colonial times under Dutch control.
After being compared to Calvin Harris the night before, at this point I was told that I looked like Robert Lewandowski...so far I can’t complain about the perception of the locals - I guess they like me.
After strolling back on the boulevard, we could finally endulge in some of the local food surprises since the sun had set which during Ramadan means that my guides were now able to eat and drink again. We took the opportnuity, had some nice street food and then went to a great seafood restaurant where I could look a fish into the eyes before deciding that he would end up grilled on my plate.
Now I’m back home, trying to get some sleep since tomorrow will be the first day of my project.
