Ingredients: 1 cup quinoa. 2 cups water. 2 tablespoons olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, diced. 1 zucchini, diced. 1 cup cherry tomatoes, halved. 1 cup broccoli florets. 1/2 cup peas. Salt and pepper to taste. 1/4 cup fresh parsley, chopped. 1/4 cup grated Parmesan cheese.
Instructions: Rinse quinoa under cold water. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and water is absorbed. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, saut until softened. Add bell pepper, zucchini, cherry tomatoes, broccoli, and peas. Cook until vegetables are tender but still vibrant. Season with salt and pepper to taste. Stir in cooked quinoa and toss everything together until well combined. Remove from heat and sprinkle with chopped parsley and grated Parmesan cheese. Serve warm and enjoy!
