The most precious piece of the @keenssteakhouse puzzle - their "Mutton Chop." This is a Barnsley style lamb chop; a double porterhouse with two sides of tenderloin and two sides of strip. It's cut through the loin to make a cross-section of the vertebra. You don't often see these, because the first move in processing many animals is to split them directly down the spine to create two halves (after the organs are removed).
