Basmati Rice
This side dish goes well with the Butter Chicken recipe.
Need a fun little rice dish to go along with any Indian, thai or middle eastern dish? This is a perfect recipe!
Note: If you do not feel like purchasing basmatic rice, just use white rice, cook according to the box/bag directions, and add the remaining ingredients
Ingredients:
2 Tablespoons olive oil
1 cup basmatic rice (I usually double this, then double all the other ingredients)
1 medium onion, chopped
2 cups of water
2 teaspoons of salt
1/4 cup of sliced apricots (I used dried apricots)
2 Tablespoons chopped currants (I use raisins)
1/4 cup sliced almonds (optional: toast them)
2 tablespoons chopped cilantro leaves
Warm the olive oil in a medium sauce pan. Add the rice and onion, and stir until the rice is well coated and translucent around the edges (~2 minutes). Add water and salt, then stir, cover, and reduce heat to low. Cook for 20 minutes. Remove from heat and let rest for about 5 minutes. Gently mix in the remaining ingredients.
Again, you can use white rice for this, which is what I always do because it's cheaper. Cook the rice in a saucepan and follow the directions on the box/bag. Saute the onion in the oil, and once the rice is finished, add the onion, apricots, currants, almonds and cilantro to it.
