Federal and state authorities in the U.S. have been investigating cases of illness from an intestinal parasite. Cyclospora is a microscopic parasite that contaminates food that has come into contact with human feces, such as when produce is irrigated or washed with contaminated water.
This fresh tomato salsa is a zesty and vibrant condiment perfect for dipping with tortilla chips or as a topping for tacos, burritos, or salads. It's packed with the flavors of ripe tomatoes, spicy jalapeños, zesty lime juice, and fragrant cilantro.
Ingredients: 4 ripe tomatoes, diced. 1/2 red onion, finely chopped. 1 jalapeo pepper, seeded and minced. 1/4 cup fresh cilantro, chopped. 2 tablespoons lime juice. 1/2 teaspoon salt, or to taste. 1/4 teaspoon black pepper.
Instructions: In a mixing bowl, combine diced tomatoes, chopped red onion, minced jalapeo pepper, and chopped cilantro. Add lime juice, salt, and black pepper to the bowl. Mix all ingredients until well combined. Taste and adjust seasoning if necessary. Cover the bowl and refrigerate for at least 30 minutes before serving to allow flavors to meld. Serve chilled and enjoy!
