These Spicy Pineapple Chicken Kabobs are a great addition to your barbecue menu because they are just the right amount of sweet and spicy. Ingredients: 2 lbs boneless, skinless chicken breasts, cut into cubes. 1 fresh pineapple, peeled, cored, and cut into chunks. 1/4 cup soy sauce. 1/4 cup olive oil. 2 tablespoons honey. 2 cloves garlic, minced. 1 teaspoon ginger, grated. 1 teaspoon chili powder. 1/2 teaspoon cayenne pepper adjust to taste. Salt and pepper to taste. Wooden skewers, soaked in water.
Instructions: In a bowl, mix soy sauce, olive oil, honey, minced garlic, grated ginger, chili powder, cayenne pepper, salt, and pepper to create the marinade. Place chicken cubes in a resealable plastic bag or shallow dish and pour half of the marinade over them. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour or overnight for best results. Preheat the grill to medium-high heat. Thread marinated chicken cubes and pineapple chunks alternately onto soaked wooden skewers. Brush the kabobs with the remaining marinade. Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through and the pineapple has a nice char.
